My friends wouldn’t necessarily call me a sports fan. I don’t hate sports, I just would rather be doing something else. And don’t get me started on tailgating. Sitting in the cold to tailgate outside of a football stadium isn’t my idea of a fun time. Football season in Philadelphia can be BITTER cold. But since football in Philadelphia is kind of a big deal, I watch the game occasionally at home with a group of people. I use the game as an excuse to get together with friends, eat yummy food, and have Stella or two. You feel me?
Wayfair recently reached out to see if I’d be interested in sharing some of my favorite products and recipes for a perfect tailgate at home, a la “couchgating.” Of course I had to say yes, because I love entertaining and I know a lot of you guys do too.
Let’s start with food. We’re not talking about staying in the kitchen for hours putting together a huge spread of appetizers. I’ve been there, done that, and it sucks. So how does a pizza sound? Well, we all know that when the game is on, it’s almost impossible to get a pizza delivered in a timely fashion, so why not make your own? I know what you’re thinking… “Nicole, you literally just said that you don’t want to spend hours in the kitchen cooking.” Well, this ALMOST homemade pizza is both delicious and quick to make.
- Pillsbury classic pizza crust
- 1 cup tomato sauce
- 1 Jalapeño, minced
- 1 cup goat cheese
- 2 large handfuls arugula
- Red pepper flakes, to taste
- Juice of 1 lemon
- Heat oven to 400°F.
- Grease large dark or nonstick cookie sheet.
- Unroll dough on cookie sheet, and press out to a large rectangle.
- Bake for 7 minutes.
- Remove from oven and add tomato sauce and minced jalapeño.
- Bake for another 7-8 minutes, until dough is golden brown.
- Remove from oven and top with goat cheese, arugula, red pepper flakes, and lemon juice.
- Enjoy!
