Oh HEY there Friday. I’m glad to see you. It’s been a whole week since I’ve seen you last {haha!}. I hope you all had a great week and an even more amazing weekend. The weather here in the Philly area has been pretty meh, but it seems like the rain is out of the forecast and sunshine is here to stay. Fingers crossed. This week I have some awesome favorites to share with you all: a quick lunch/dinner recipe, a new self-growth book, a scone recipe that I’m DYING over, and a look into my Sunday mornings.
1. Nourish Bowls
I’ve been scouring Instagram lately looking for new recipes to try out, and I came across nourish bowls. Apparently I’m late to the party on this one, because people have been making them for a while now. Basically, a nourish bowl contains nutrient dense vegetables, carbs, healthy fats, and proteins to make a filling meal in a bowl. It takes just a few minutes to put together, and you can literally add whatever you want. It’s perfect for days when you need to clean out your fridge!
I used basic ingredients for my first bowl – romaine, rice, carrots, red cabbage and roasted corn, topped with Goddess dressing and lemon juice. Next time, I’m spicing it up with quinoa, roasted Brussel sprouts, kale and beets.
2. You are a Badass
It’s no secret that I love self-help/self-growth books. I’ve been reading them for YEARS. So when Bryan bought me “You are a Badass” by Jen Sincero, I couldn’t wait to start reading it. It’s SO good. I really love Jen’s tone throughout the book. She tells it like it is and doesn’t sugar coat anything. As I’m reading, it sounds like I’m having a conversation with her over coffee or cocktails. Here’s one of my favorite quotes from the book. It’s literally brilliant: Watching someone else totally go for it can be incredibly upsetting to the person who’s spent a lifetime building a solid case for why they themselves can’t.

3. Glazed Lemon Blueberry Scones
A few weeks ago I woke up one morning with the sudden urge to bake. If you know me, you know that baking is not really my thing. It’s too precise and if you screw up one ingredient the entire thing could be screwed up. I prefer cooking to baking any day. But anyway… one morning I woke up wanting to bake something, so I searched around on my favorite foodie blogs. I came across these glazed lemon blueberry scones from Sally’s Baking Addiction {she’s a local Philly blogger and has the most amazing recipes!}. I immediately asked Bryan to go pick up heavy cream from the storem, and of course he didn’t object, since I told him I was making scones for breakfast!
I followed the recipe exactly, and to no surprise they turned out SO FREAKING GOOD. I think the secret to making them was to freeze the butter and grate it before adding it to your other ingredients. Grate butter? Yep, I’m serious. It makes all the difference. I don’t know much about baking, but apparently the grated butter creates little pockets of air and makes the scones airy and light on the inside. This is the key step to making sure your scones aren’t really dense and “brick” like. I loved these scones so much that I made a batch the following weekend for my mother-in-law for Mother’s Day. I even persuaded a friend at work to bake them. Everyone loved these scones!
4. Mornings Spent Blogging & Planning
Sunday mornings are probably my favorite time in the entire week. I’ve been able to spend the last few Sundays just hanging out by myself, drinking my coffee, listening to music, planning and blogging – basically my favorite morning routine ever. I find that if I’m productive on Sundays, my entire week is set up for success. Anyone else feel that way? Although this Sunday I have to run a bunch of errands, I’m hoping to get up early to spend a few hours writing and taking photos for posts next week.
