Today I’m sharing with you a super delicious and fast recipe that I adapted from Better Homes and Gardens. I’m a big shrimp eater so anytime I find a new recipe, I’m excited to try it out! This dish is perfect for week nights because it can be prepped and cooked in 30 minutes. I don’t know about you, but when I get home from a long day at work, the last thing I want to do is spend hours prepping dinner.

Spanish Rice with Shrimp and Peppers

Ingredients
- 8 oz fresh or frozen shrimp
- 1 (8.8 oz pouch) Uncle Ben's Ready Rice Spanish Style
- 1 green bell pepper, chopped
- 1/2 red onion, chopped
- 1 tsp dried thyme, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1/3 cup dry white cooking wine
- 1 clove garlic, minced
- 1 jalapeno, chopped
- 1 (16 oz.) bag frozen peas (I really like peas. You could use less.)
- 1 tsp red pepper flakes
Instructions
- Thaw shrimp, if frozen.
- In a large frying pan, cook the bell pepper, red onion and thyme until tender.
- Add can of undrained diced tomatoes, wine and garlic to the pan. Bring to boil. Simmer the ingredients, uncovered, for 10-12 minutes.
- Cook rice as directed on pouch (90 seconds in microwave)
- Add shrimp, peas, jalapenos and red pepper flakes. Cook for 5 minutes or until shrimp turn pink. Serve over rice.

This looks so good. I was actually at the grocery store yesterday and thought to myself, “I should really buy shrimp soon and make something out of it” bc my BF and I love shrimp. I’ll have to let you know if I try it!
