With the weather finally getting a bit warmer lately, I had the urge to bake something summery and fresh. Cookies? No. Cupcakes? Meh. Cake? Sure, why not. There are tons of different types of cakes, so a lesser chance of screwing it up? Here’s hoping!
To be honest, I’m not a big cake person. In fact, when given the option of desserts, I almost never pick cake. Not even birthday cake. That is unless pound cake is in the mix {or cheesecake, but that doesn’t count as cake in my book}. Pound cake is my jam.
But I didn’t want to bake a boring pound cake. Google “pound cake recipe.” It’s been done like a million times. I wanted to add a little flare.
Since I love raspberries and lemons, and already had some chillin’ in the fridge, I incorporated them into a pound cake. It basically made the most scrumptious dessert in the entire world. Side note: Does anyone else eat pound cake for breakfast? It’s terrible for my waistline, but boy is it a treat.
The recipe below is by no means healthy, unless you count the fresh fruit, but it’s SO SO SO SO good.
- 1 1/2 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/3 cup sugar
- 3/4 cup unsalted butter (1 1/2 sticks)
- 2 eggs
- 4 tbsp lemon juice
- zest of 1 lemon
- 1/2 cup greek yogurt (I used 2% fat)
- 1 cup raspberries, plus a handful for topping
- 1 1/2 cup powdered sugar, sifted
- 3 tbsp lemon juice
- Preheat oven to 350 degrees F and grease a 9x5 loaf pan.
- In a medium bowl, combine flour, baking powder and salt. Set aside.
- Using an electric mixer, combine sugar and butter.
- Add in eggs one at a time to butter/sugar mixture.
- Mix in lemon zest and juice until well combined.
- Add the dry mixture.
- Fold in Greek yogurt and raspberries.
- Bake for 45-50 minutes, until toothpick comes out clean.
- For the glaze, combine powdered sugar and lemon juice. Drizzle on top of cake.
- Top with additional raspberries.
There you go, peeps. The most amazing raspberry lemon pound cake recipe on the planet. Go make it this weekend for Memorial Day. You won’t be disappointed.
