I mentioned a few weeks ago that I’m partnering with Food Should Taste Good on a series of posts this fall. Today is my second post: a special recipe using their multigrain tortilla chips! I’ve never made tortilla crusted cod before, so I was excited to put this recipe together. It was an easy, quick and healthy Friday night dinner. I looked through my spice cabinet and picked a few spices for this dish. I wanted something spicy! I love this recipe I put together because the avocado lime dipping sauce cools down the heat of the fish. Plus, it takes about 2 minutes to make the sauce. Who doesn’t have 2 minutes to spare?! I hope you enjoy making this dish as much as I have.
Tortilla-Crusted Cod w/ Avocado Lime Dipping Sauce

Ingredients
- 1 lb fresh cod
- 1 bag Food Should Taste Good multigrain tortilla chips, finely crushed
- 2 egg whites, beaten
- 2 teaspoons crushed red pepper
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 avocados
- 3 limes, juiced
- 1 lime, zested
Instructions
- Heat oven to 400 degrees.
- Cut cod into four pieces.
- Place egg in a shallow bowl. In a second bowl, combine crushed tortilla chips, crushed red pepper flakes, cumin and chili powder.
- Dip cod in egg followed by the tortilla mixture.
- Place cod on a baking sheet.
- Bake 12-14 minutes or until fish is flaky.
To make avocado lime dipping sauce
- Place avocados, lime juice and lime zest in blender.
- Blend until smooth.
