Hey everyone. This weekend went by way too fast, but I seemed to get a whole lot done – including putting away our Christmas decorations. But now that everything is away, our apartment looks so empty. Does anyone else feel that way about their place? I have a huge urge to go to Home Goods this week and buy some new things to spruce it up. I’ve been scouring Pinterest for inspiration, and think I have a good idea for our living room. If I end up doing it, I’ll make sure to share photos here on the the blog.
Another thing I did this weekend was go food shopping. I’ll be honest, I haven’t gone in a few weeks, and as a result, I’ve been eating out a lot. Certainly not a good way to start off the new year. Nonetheless, my kitchen is now fully stocked with healthy and delicious food.
With all the yummy fruits and veggies in my fridge, I had the urge on Sunday to make smoothie bowls for Bryan and me. The last one I made was an acai bowl over a year ago! I LOVE them, but they can get expensive. Frozen acai packets are almost $9 for two servings. My wallet can’t handle that all the time. So instead, I decided to make a smoothie bowl with frozen wild blueberries. It’s a lot of affordable, and just as nutritious.
It’s beyond simple to make, and you can top it with whatever you like. Personally, I’m a huge fan of seeds {chia, hemp, flax}, but I only had chia in my pantry, so that’s what I used.

- 1 1/2 cups frozen blueberries
- 1 banana
- 1/2 cup coconut yogurt
- 1/2 cup almond milk
- Chia seeds
- Raspberries
- Mango
- Coconut shavings
- Kiwi
- Blend blueberries, banana, yogurt and almond milk to create a smoothie.
- Add the smoothie to a bowl, and top with chia seeds, raspberries, mango chunks, coconut shavings and kiwi.
- If the base is too thick, add an extra splash or two of almond milk. The consistency should be thick enough to eat with a spoon, but not too watery.
