Maybe it’s just me, but Valentine’s Day always seems so cheesy. Don’t get me wrong… I LOVE holidays. Cinco de Mayo? Pass me a spicy margarita extra salt! Easter? We’re wearing our Sunday best all day. But V day? Eh. It’s never been my thing, but I enjoy making holidays feel a bit more special than the typical day.
I tested out a new cookie recipe last weekend that’s perfect for Valentine’s Day and also insanely delicious. Try them out and let me know what you think.
What You’ll Need:
3/4 cup butter, softened
1/2 cup salted sugar
2 egg yolks
1/2 teaspoon vanilla extract
1 3/4 cup all purpose flour
fruit preserves (I prefer raspberry)
Instructions:
Preheat your oven to 375 degrees F.
Cream together butter, sugar, egg yolks, and vanilla. Add the flour little by little, until dough starts to form. I put the dough in the refrigerator for 15 minutes to firm it up a bit.
Remove from fridge and roll the dough into 1 inch balls. A melon scoop is perfect to make them more consistent. Place the dough balls a few inches apart onto an ungreased cookie sheet. Use your pointer finger to make two indents (the shape of a heart) in the middle of each cookie.
Put a cup of jam and a small splash of water into a separate small bowl and mix it with a fork to thin it out a bit. Fill each of the heart shape indents in the cookies with jam.
Bake for 8-10 minutes, until the bottoms are golden brown. Remove from the oven and let cool on a wire rack. Enjoy!
