Happy Monday, readers! This weekend felt super short, but I got a lot done around the apartment so I’m happy! Here’s my Weekend Recap. Enjoy!
I spent Saturday afternoon at my good friend Danica’s bridal shower in New Jersey. Her wedding is in September and I can’t wait. Although it took about two hours to get there, I wouldn’t have missed it for the world. Bryan was nice enough to drive me there. He and his friend Jonathan went to the beach while I was at the shower. The shower was at Danica’s mother’s house and it was absolutely beautiful. Her mother and sister did an amazing job decorating the back yard with lights, balloons and gorgeous centerpieces. I’m sure Danica had a great time!
The rest of Saturday was spent napping, showering and then going to bed for the night. After many sleepless nights last week (due to my cough), I was thrilled to get to bed early.
On Sunday morning, I made Bryan and me waffles. We don’t make them very often, but when we do it’s always a nice treat. I topped my waffles with syrup and bananas. YUM.
After eating breakfast, we cleaned the apartment top to bottom. We usually do this at least once a week, because I hate when my home is a mess. It took an hour or so, but I washed all my laundry including the bed sheets, dusted the living room and bedroom, cleaned both bathrooms, put away dishes and cleaned the kitchen (including re-organizing our cabinets). In the midst of cleaning the bedroom, I was inspired to re-organize the jewelry I wear most often. I’m still interested in getting a necklace stand, but for now this will have to do.
After cleaning the apartment, we drove over to Kohl’s to pick up new measuring cups. We had a gift card so we figured we mind as well use it on something we need. Our old measuring cups were bad. I don’t think we even had a full set. Somehow in moving apartments last year, we lost a few. Now we have a complete set!
For dinner, I made Panko breaded baked chicken for Bryan and a black bean chipotle burger for myself. I also made steamed broccoli, Velveeta macaroni and cheese, and a side salad. Everything turned out perfectly. The secret to getting delicious Panko is to melt butter in a frying pan and add the Panko on medium heat. Once the Panko browns a bit in the pan, you take it off. Then you just dip the chicken breast in egg and then coat with the Panko. Now ya know!
The rest of Sunday was spent relaxing on the couch and watching House of Cards, Big Brother and Bar Rescue.

I’m so jealous of your cleaning efficiency skills! If I could clean my apartment in an hour I would be a happy happy girl!
LOL, our apartment isn’t too large so it can be done pretty quickly!
Having a clean house is the best! I’ve actually got some cleaning scheduled for today, tomorrow, and Wednesday. I love making spaghetti out of spaghetti squash, I’m not sure why, but cooking up some turkey meat and the squash is my favorite haha. But baking on the other hand, I love that too and could do that everyday for the rest of my life! A lot of relaxing was done for me this weekend, seriously, I pretty much sat on the couch all day Saturday, I was super tired for some reason, but Sunday I did a lot of grocery shopping and went skateboarding :).
