Weekend Recap (7/14 – 7/15)

You may be wondering why I’m posting my weekend recap post before Monday morning.  The thing is, I really wanted to post a recipe on Monday for every one and didn’t want to make the post extremely long with a recap and a recipe.  So, here ya go.

Friday after work, Bry, myself and a bunch of my work friends went to our favorite happy hour place and drank lots of margaritas & beer.  I stuck with 2 margaritas.  We were there until almost 9pm!  I was happy to be home and sleeping by 9:30 on Friday night.  Bry says I can’t hang.

I was happy that I didn’t have to set an alarm all weekend!  That hasn’t happened in quite some time.  On Saturday, it was pretty dreary outside, so I opted to pass on outdoor yoga.   Bry and I drove to Whole Foods to taste test the local honey companies, and then went to the Produce Junction and got less than $18 for all of this:

We got 5 lbs of bananas, 6 tomatoes, a package of grape tomatoes, 1 honeydew, 2 lbs of snap peas, 5 onions, 4 yellow peppers, and 8 pears!  We did great!  We already ate some of the bananas and have used them for our banana pancakes for Sunday brunch.

After that, we just relaxed on the couch for the afternoon.  Nothing too crazy.  I did tweet later on that I spent a lot of time on Pinterest and watching 24.

To use some of the pears that we purchased, I made a quick dinner of lemony basil pasta with fried shrimp and pears.

It was beyond easy to make.  No need to post a recipe for that.

This morning, I woke up and noticed that it was pretty overcast.  I went for a 2 mile run and came back in a puddle of sweat.  It may have been somewhat overcast, but man was that sun beating down on me.  After my short run, Bry and I made banana pancakes from scratch and popped open a bottle of champagne for mimosas!  Mimosas are my favorite addition to Sunday brunch.

We don't have champagne flutes, so my only option was a wine glass!

For dinner tonight we are making separate dishes.  I forget what Bry’s going to have, but I’ll be having my vegetarian sausage with peppers and onions with a side salad of greens, pears, goat cheese, and balsamic vinaigrette.  YUM.

The rest of my night will consist of cleaning, finishing up laundry, and relaxing on the couch.  I love weekends like this.

OMG I KNOW! It was great. You need to hit up a produce junction!

Definitely relax! Take it easy. Those are the best weekends. By the way, the shrimp dish looks divine!
