One appliance in my kitchen that I can’t live without is my juicer, the Breville Juice Fountain Multi-Speed 900 Watt model. Yes it was an investment, but it saves me so much money on fresh squeezed juices and that makes me happy. Our juicer has been getting a lot of use lately, so I thought it would be appropriate to share a new recipe I put together. When I first developed this recipe, I was looking to create a vibrant green juice. I should have known better that adding carrots would make the juice less green, but that’s okay because it is so delicious. The lemon and ginger added the right amount of zest, and the kale and spinach provided loads of nutrients.

- 3 medium carrots
- 2 medium red apples (cored)
- 1 large handful kale
- 1 large handful spinach
- 1/2 inch ginger
- 1/2 lemon (cut off peel)
- Run all ingredients through the juicer.
- Serve immediately.
- Depending on the size of your juicer's feed tube, apples may need to be chopped before juicing.
